what is easy to build a touch lamp (LED) circuit?

Me and my friend are trying to make a 360 face plate that has a few LEDS on it that light up when you touch a touch pad. i’ve tried to make one, but the furthest i got was an extremely slow-off LED (it takes 5 minutes about to turn off) but i want a circuit that when you touch the touch pad, it turns the light on, and when you release your finger, the light stays on (until you short it with an off switch)

how can i do this (please make it easy, im not an expert at electronics)

example -> finger connects two metals (touch pad) -> light turns on -> finger releases touchpad -> light stays on
